Portland is getting a new vegan fried chicken cart.
The Mocking Bird, which currently has a stand at the Happy Valley Farmer’s Market, is set to open its new plant-based chicken cart in the first week of June.
“Secret is out! I have officially signed papers to start a cart at Rose City Food Park,” The Mocking Bird’s owner, Kayla Lamberson, wrote on Instagram.
She continued: “If you haven’t been, it’s a super cute location. [There’s a] bar on-site, dog-friendly, real bathrooms, parking, and once everything is back to normal, lots of entertainment—including live music, corn hole boards, darts, you name it.”
The Mocking Bird specializes in vegan comfort food staples like cashew-based mac and cheese and fried “chicken” and waffles.
Where to Get Vegan Fried Chicken in the US
The popularity of vegan fried chicken is on the rise.
Last August, KFC teamed up with Beyond Meat to create Beyond Fried Chicken. KFC trialed the new plant-based fried chicken for one day at a store in Atlanta over the summer. In less than five hours, the vegan chicken sold out. Earlier this year, the fast-food giant announced it would trial its plant-based fried chicken in more than 70 locations.
Last year, the plant-based pop-up Eat Love opened its first brick-and-mortar storefront in Orange County, California, making its the first-ever vegan fried chicken shop in America. The restaurant sells seitan-based fried chicken. It also offers other plant-based comfort foods like coleslaw, mac and cheese, and a variety of desserts.
Vegan food truck Original Herbivore serves up buckets of plant-based fried chicken in Southern California. In Los Angeles, Doomie’s Home Cookin’ offers fried chicken baskets or a hearty, three-piece fried chicken meal. The meal includes a “leg,” two “breast” pieces, mashed potatoes and gravy, golden corn, a steamed roll, and a side salad.
The New York-based restaurant Hartbreakers sells a variety of meat-free fried chicken sandwiches. Lotus Vegan Restaurant—located in Pinellas Park, Florida—sells soy- and tofu-based crispy fried “chicken.”
The Fiction Kitchen in North Carolina offers crispy fried chicken. And NuVegan café—which has locations in D.C., Virginia, and Maryland—sells meatless fried chik’n drumsticks.
