Vegan eggs are now being served in college, healthcare, and corporate cafeterias throughout the U.S.
California-based food tech brand JUST has entered a partnership with global food service corporation Sodexo. The move is part of Sodexo’s Better Tomorrow 2025 strategy to slash its carbon emissions by 34 percent by 2035. The company serves 13,000 sites across the U.S. and Canada.
Made from mung bean protein, the JUST Egg uses 98 percent less water, 83 percent less land, and emits 93 percent less carbon dioxide than conventional eggs. The plant-based egg is versatile. You can use it to make scrambles, omelets, quiches, and other classic egg-based dishes. In addition to this, it’s cholesterol-free.
“We’re thrilled to become a preferred supplier to Sodexo, which serves over 75 million consumers each day. Sodexo’s sustainable menu innovation initiative has resulted in hundreds of new plant-based recipes and we’re excited to see a range of delicious JUST Egg dishes arrive at clients’ facilities in the months ahead,” Josh Tetrick, co-founder and CEO of JUST, said in a statement.
Since launching its liquid vegan egg to retail and food service distribution last year, JUST has sold the equivalent of 20 million eggs. Major retailers such as Whole Foods Market, Kroger, and Walmart all stock the JUST Egg. It’s also available at Mid-Atlantic-based chain, Gregory’s Coffee, where it’s the top-selling breakfast item.
The company is now looking to ramp up production through its new processing facility in Appleton, Minnesota.
The 30,000-square-foot site is capable of producing enough protein for 1.5 million vegan eggs in six days. This will aid the company in making sustainable, plant-based food more accessible.
JUST aims to reduce the price of the JUST Egg—which currently retails between $7 to $10 per bottle, depending on location—and achieve price parity with chicken eggs. It costs the company around 20 cents to produce one vegan egg. With its new facility, JUST aims to bring the cost down to 4.7 cents per egg.
Shortly after announcing the new facility, JUST announced its latest product: a frozen, folded vegan egg. It is expected to launch in stores across the U.S. in April.
