A new vegan burrito restaurant recently opened for one day only in Lexington, Kentucky. The twist was the tiny restaurant wasn’t for humans, but for squirrels only.
GirlsGirlsGirls — a burrito joint behind the University of Kentucky — decided to open the tiny restaurant replica, called SquirrelsSquirrelsSquirrels, to help out its local squirrel population during the winter.
The restaurant’s miniature second location featured tiny picnic tables and an all-vegan menu, including dishes like the Trashsquirrel Burrito — filled with organic peanut puree and sunflower and pumpkin seed granola — and Vegan Tacos Bellota, which consisted of toasted acorn and almond butter.
The small rodents could also opt for the C.B.D. Bandito Quesadilla, which featured cashew butter and dried dates.
According to GirlsGirlsGirls, they did have some squirrel patrons attend their one-day tiny pop up and feast on vegan burritos.
“Our squirrelly friends love our compost as much as we do,” said co-owner of GirlsGirlsGirls Sara Wood to Food and Wine. “They keep us company on our patio all season, and they make up a big portion of the campus population, so we simply cannot ignore!”
Local Vegan Food for Humans and Squirrels Alike
“Turns out, squirrels also love to eat and drink local, so Girls is a great fit,” she continued. “We are all about local, and we’re happy to accommodate today’s squirrel dietary concerns. Vegan, veg, low-carb acorn only, gluten-free… you name it, we [got you].”
GirlsGirlsGirls also has a vegan menu for non-rodent human customers. It includes a spicy Moosewood Vegan Burrito with black beans and black rice, a Green Hit Bowl, and a Babybull Vegan Burrito with crispy tofu. GirlsGirlsGirls says on its website, “we are happy [and] proud to offer a wide array of vegan options.”
While SquirrelsSquirrelsSquirrels was only a one-day event, customers can still see and support the venture inside the original burrito restaurant.
GirlsGirlsGirls has displayed its tiny second location alongside a donation jar for the Lexington Humane Society, the largest pet adoption center in Central Kentucky. The center educates the local community about responsible pet care and promotes the compassionate treatment of all animals.
