We should probably pre-warn you that if you eat your breakfast when you get into the office, then you may want to do a quick pocket-mirror check once you’re done munching this one. A recurring scenario seems to arise mid conversation with coworkers; their gaze lowers slightly and stays there a bit longer than normal…. “Is that a new lipstick?” “Um.. no?” ..Just some very patchy blueberry stains.
Regardless, porridge is our ride-or-die breakfast here at LK because oats are packed full of protein which makes the stuff is ideal for a boost of energy pre or post work out. Toppings are as interchangeable as pizza and it’s much more portable than toast…
Oh! And it’s super quick to prepare…
Berry Lazy Oatmeal
INGREDIENTS
– 1/3 cup Quick or rolled oats, whichever you like best
– 1/3 cup Frozen blueberries
– 2-4 Fresh strawberries
– 1 tbsp Mixed seeds (pumpkin, sunflower etc)
– 1 tbsp Raisins
– 1 tbsp Desiccated coconut
– 1 tbsp Ground flaxseed
– 1 tbsp Chia seeds
– 1/2 cup Non-dairy milk
METHOD
– Add oats to a bowl or mason jar and soak in your favourite non-dairy milk for a minimum of 5 minutes (or overnight if you are food prepping) and add in the chia and flaxseeds with a quick stir
– Whilst oats are softening, thaw out the frozen blueberries and slice strawberries then add to the oats
– Add berries and raisins and sprinkle with coconut
– Top with seeds for an added crunchy texture
Serve hot or cold
