There’s now a vegan restaurant on the Las Vegas strip. Truth & Tonic, located on the fourth floor of the Venetian Resort, will now serve only plant-based foods.
Executive chef Pete Ghione adapted wellness-focused Truth & Tonic’s menu for health reasons.
“I understand that I can’t change someone’s health in a meal or two,” he told LIVEKINDLY. “However, I hope that with a fully plant-based experience I can be an inspiration for change.” He continued, “I’m very proud to be the first one to deliver this experience to a rapidly growing market on the Las Vegas Strip itself.”
As well as “rustic fruit-based dishes,” like coconut yogurt, acai, and blueberry compote, the restaurant now serves a variety of baked vegan frittatas, made with mung bean-based JUST Egg.
“I chose to use JUST Egg to replace the chicken egg experience,” Ghione said. “To be more approachable to those who have doubts that eating plants is anything but delicious.” He added, “I aim to appeal to all diners, not just people who identify as plant-based or vegan and I think JUST Egg gives me the ability to do ‘just’ that.”
Vegan Las Vegas
Las Vegas is becoming more vegan-friendly. It’s now home to a meat-free butcher shop called NoButcher, a vegan hot dog cart, and a vegan supermarket called Veg-In-Out Market. The latter opened towards the end of last year and aims to be a “judgment-free zone.”
“We hope to bring a sense of community between those who are currently vegan, those who are thinking of becoming vegan, and those who don’t know they’re vegan yet,” co-founder Erik Rogers told Vegans, Baby.
He added, “we all start our journey to becoming a vegan in different ways and for different reasons. The important part is that we get there.”
Meat-heavy businesses are also now offering vegan options in Las Vegas. Big Whiskey’s American Restaurant & Bar launched a vegan menu last year. Slaters 50/50—famous for its half beef, half bacon burger—added meat-free options last June, including the 24K Gold Burger, which is served on a gold leaf-brushed bun.
