Customers are lining up to get a taste of a plant-based sausage and egg sandwich featuring California-based food company JUST’s vegan egg.
Josh Tetrick, CEO and founder of JUST, took to Twitter to deliver the news: “Official launch in Florida – w/ @winterparkbisco. Line around the block for #theJUSTegg ?.”
The vegan breakfast sandwich, called the “Sasage JUST Egg & Cheez,” was developed by former plant-based chef to pop singer Ellie Goulding and the band Blink-182, Mary Mattern. The new breakfast item features a plant-based JUST egg patty that’s paired with a meatless sausage and dairy-free cheese, then sandwiched between two flaky vegan biscuits. The sandwich was served by Florida-based pop-up restaurant Winter Park Biscuit Company at Lineage Coffee Roasting in Orlando. According to the restaurant, chef Mattern has been working to develop the sandwich for the business’s eventual brick-and-mortar since May.
Three hours after the Winter Park Biscuit Company pop-up began, the restaurant took to social media to announce that not only had it sold out for the day, but it had also sold more biscuits than ever before due to the overwhelming popularity of the vegan egg patty.
Last month, JUST began rolling out the vegan liquid egg in select stores across the U.S. The Just Egg can stand in for traditional eggs in a wide variety dishes such as scrambles, omelets, frittatas, quiches, French toast, and more. The Just Egg Patty, which the brand is working to distribute through foodservice providers, is suitable for comfort food classics like a sausage, egg, and cheese breakfast sandwich. Both products are made from mung beans, which adds 5 grams of protein in the vegan liquid egg and 8 grams of protein in the Just Egg Patty. In addition to that, neither product contains cholesterol in contrast to chicken eggs.
The Just Egg is currently available as a scramble in an all-day vegan breakfast burrito at plant-based fast-casual chain, Veggie Grill. Last month, the vegan liquid egg became available through online marketplace, Jet. JUST plans to continue rolling out its vegan egg products at select retailers, foodservice providers, and restaurants across the country, and eventually, Europe through major egg producer, the Eurovo Group.
