2/3 cup lime juice, fresh squeezed
1/4 cup simple syrup
3 cups water
Fresh mint leaves
Lime slices
Popsicle molds
(Making it boozy? You’ll need ½ cup of white rum; the rum-to-water ratio should be 1:5 for successful freezing.)
OK people, get your popsicle molds out and follow these simple steps. Apart from the freezing stage, getting everything ready should take you no more than 15 minutes:
