Coleslaw is a side dish that typically consists of finely shredded raw cabbage. It usually features a salad dressing commonly made with either a vinaigrette or mayonnaise. I made a vegan version using egg-free mayonnaise instead.
To make this dish a bit more hearty, I added pasta noodles. You can use any noodles you like, but for this recipe, I used ditalini pasta noodles. The recipe only calls for 11 ingredients. In addition to the vegan mayonnaise and the ditalini pasta, you will need apple cider vinegar, garlic powder, celery seed, sea salt and pepper, coleslaw mix, English cucumber, red onion, and celery to make it.
