Chef Chloe Coscarelli is back in the restaurant scene with her new plant-based concept, Chef Chloe and the Vegan Cafe. The eatery will be a part of the new St. Roch Market in Miami.
St. Roch Market is a food hall concept based off its original location in New Orleans. The upscale market features “a diverse line-up of twelve chef-driven concepts led by talented and passionate entrepreneurs,” according to its website. The owners hope to elevate creative, upcoming chefs, while also creating a dynamic and engaging community space. The 10,000-square-feet space incorporates a sleek, modern design to create a high-vibe atmosphere. This is not a dine-and-dash venue. It is an experience.
Those familiar with Chef Chole’s former venture, by CHLOE, can expect an entirely new menu at St. Roch. Coscarelli left her namesake multi-chain restaurant after a dispute with the chain’s hospitality group back in March 2017. In a press release following her departure from her project, she wrote, “From the day I began this journey, my goal was to create a fun, friendly restaurant that showcased how delicious vegan food can make a powerful and positive impact in the world—a belief that has never for a moment wavered. To me, veganism is so much more than a vehicle for business; it’s a vote for kindness, a dedication to sustainability, and a commitment to compassion.”
She concluded her statement with hope, “I will not let anyone deter my goals. I am committed to being strong and positive, and will continue to champion vegan cuisine and what it stands for…I have some exciting new projects in the works and can’t wait to fill you in soon.”
Chef Chloe and the Vegan Cafe aims to deliver on her promise. In addition to this new cafe, Coscarelli is also a former champion of Cupcake Wars and the author of three cookbooks, with one on the way. “Chloe Flavor” will debut on March 6, 2018, and is now available for pre-order. The books include many of the chef’s classic dishes, like the Chlostess Cupcakes, Mac and Cheese, and Meatball Sliders — so those outside of the Miami area can get a taste for her famous dishes at home.
