This baked eggplant fries recipe is oh-so-delicious! I gave it a bit more of a Mediterranean flair with the spices. And I served them with garlic aioli, but you can play around with the spices and serve with a different dipping sauce. Like for example, you can use Italian seasonings and serve with marinara sauce, etc!
